Because I didn't measure the seasonings, the amounts listed below are approximate and can be changed to your taste.
1# venison burger
1 medium onion, coarsley chopped
1 can diced tomatoes
1 can kidney beans
1 can beer
2 tsp dried parsley
1-1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp smoked paprika
3/4 tsp crushed red pepper
2 tsp garlic powder
Brown venison burger in olive oil. Remove meat from pan and cook onions until soft, about 10 minutes. Combine meat and onions. Add seasonings, adjusting to taste. Add kidney beans, tomatoes and beer. Simmer 20-25 minutes. Serve with grated cheese and bread to sop up the goodness!

Oh man, I love venison and chili. That looks fantastic. Where do you get your venison, do you know a hunter or can you buy it somewhere?

ReplyDeleteI've never tried chili with venison, though I've made it with buffalo. It looks really hearty and delicious. Perfect for a "snow day"!
