What do you get when you layer thinly sliced potatoes, caramelized onions, garlic, and butter then bake it until the top is brown and crispy? You get one of my favorite potato dishes - Potatoes Lyonnaise.
Slice two large onions, put them in a frying pan with a little olive oil and cook slowly until caramelized. When they are ready, add two tablespoons minced garlic and cook until the garlic is fragrant.
Place the caramelized onions in a bowl while you fix your potatoes.
Peel and slice (thinly!) two pounds of potatoes and boil gently until tender. You have to watch these.. they'll fall apart quickly!
In a buttered casserole (I use the non-stick spray), place a layer of potatoes. Add some salt and pepper.
A layer of caramelized onions goes on top of the potatoes and those are seasoned with salt and pepper. Continue layering the potatoes and onions, ending with the potatoes. Melt a stick of butter and pour over the potatoes.
Bake at 400 degrees until the potatoes are golden brown.
