This is my #1 granddaughter, Kayla. I'm visiting her in California and also waiting for the arrival of granddaughter #2, Emily!
I'm sharing a bedroom with Kayla during my stay. About 3 o'clock this morning she woke me up. She said "I'm hungry, Gramma... will you make me some waffles?"
I promised her we'd make waffles and have them for breakfast tomorrow, but she had to go back to sleep first. Today, after shopping for summer clothes, we came home and made her Mommy's favorite waffle recipe - Golden Waffles. We let the waffles cool, then froze them for an easy breakfast (just pop them in the toaster) before Kayla heads to pre-school in the mornings.
2 c flour
3 tsp baking powder
1/4 tsp salt
2 T sugar
2 egg yolks
1-1/4 c milk
6 T vegetable oil
2 egg whites
Sift together flour, baking powder, salt and sugar. Beat egg yolks and add milk. Combine yolks and milk and oil with dry ingredients, mixing until smooth. Beat egg whites until stiff and fold into the mixture. Follow directions on your waffle iron.
