Cornbread like Marie Callender's

If you live east of Texas you may not have heard of Marie Callender Restaurants. They're famous for their pies, but I'll take their cornbread for dessert any day -  served hot with honey butter on the side.

This isn't a corny cornbread. It's light and sweet with a tender crumb. It's my favorite cornbread, ever! I used Crisco for the shortening today, but have used butter and oil in the past and the cornbread has always turned out well. If you want spice, add some chopped jalapeno's. If you love bacon, add some cooked, chopped bacon. If you want corny, add some corn kernels! This is a recipe you can make your very own. (Thanks, Marie!)

You can find this recipe all over the interwebs, and here it is again! Be sure to make the honey butter - you won't be sorry!

Cornbread like Marie Callender's
1-1/4 cups flour
3/4 cups cornmeal
2 tsp baking powder
1/3 cup sugar
3/4 tsp salt
1/4 cup shortening
1-1/4 cups milk
1 egg

Put all dry ingredients into a bowl and whisk to combine. Cut in the shortening. Add milk and egg and mix until just combined. Put into a greased 8x8" pan and bake at 400°F for 25-30 minutes.

Honey Butter
1/2 cup soft butter
1/3 cup honey
1/2 tsp cinnamon

Mix all ingredients well. Serve with cornbread.

  1. I only know Marie Callendar because I think she has a line of frozen foods. Now I know the genesis. I think it's the honey butter that would make this recipe so delicious ;)

  2. I do not have a good made from scratch corn bread recipe, now I do! I have always used a box of Jiffy mix. I like a little lime honey butter on mine and yes please to a bit of jalapeno in the bread too!

  6. I've never eaten there, but your recipe is almost the same as mine Karen! So I know it's delicious, and it has sugar in it-I don't like cornbread without sugar. :)

  8. OMG, when we lived in southern California we'd go to Marie Callendars at least twice a month and I'd always have the cornbread! It's been almost 20 years since I've eaten there. Thanks for this recipe, Karen!

  9. I didn't even know there are MC restaurants! The recipe sounds great and I like it because there is a little more flour than corn meal. I'll have to try this! Thanks!

  12. Karen, we discovered Marie Callendar's when we lived in La Jolla, CA. It was our "go to" restaurant with a toddler and an infant. Love the cornbread. My southern (well, I'm southern too) mother did not like the cornbread because it had sugar in it. While I loved my mother's cornbread, I liked Marie's better. I've not seen a M.C. here in the Chicago area. Thanks for the recipe. I'm becoming a "follower" in case you have more of her recipes!!

    Best,
    Bonnie

  13. I think this is the recipe I've been looking for for a long time. I like corn "cake".... sweet and tender, not like southern dense cornbread. Can't wait to try this.

  14. This is the PERFECT corn bread....and with honey-butter to boot. I often have "discussions" with the non-sugar corn bread kind of people. I don't understand their thinking!!
I can't wait to make this!
oh...and I love Marie Callendar's. They have a great spinach salad.

  16. Cornbread is one of my favorite accompaniments to a meal, or even just by itself. In New England, a major variant is Johnnycake (which I believe is also called hoecake in the south?) Flat and fried, not quite the same thing. But we love our cornbread, too! When it's light and hot and slathered with sweet butter... Yum!

  18. It's been ages since I've been to a Marie Callender's - my favorite was their strawberry pies! If I'd had some of this cornbread, I have no doubt this would've been a favorite, too. So many thanks for sharing this recipe so that I can have that taste. 8-)
