Mexican Salmon Patties

Happy Cinco de Mayo! 

Cinco de Mayo celebrates the Mexican army's victory over the invading French army in 1862. One way to celebrate? With food, of course!

I had planned on making salmon patties for dinner, so instead of my usual ingredients, I added some flavors of Mexican influence and here you go... Mexican Salmon Patties! The only thing that was missing was a margarita!
PRINT RECIPE

Mexican Salmon Patties

1 can salmon, drained
1 egg
1/2 cup sour cream
1/2 tsp lime juice
1/2 jalapeno, stemmed, seeded, and finely diced
1 rib celery, finely diced
1 T finely chopped cilantro
4 green onions, finely chopped
3 T crumbled Queso Fresco
3 T bread crumbs
1/4 tsp salt
1/2 tsp black pepper

Combine all ingredients in a medium bowl and mix well. Shape into patties. Cover and refrigerate at least an hour.

Oil for frying
1 egg, beaten
Panko bread crumbs

Dip each patty into the egg. Roll in Panko bread crumbs. Fry at 350F until browned on both sides.

Serve with rice and garnish with sliced avocado, lime wedges, and crumbled Queso Fresco

Makes 4 12-oz. patties

    Salmon patties on the grill! (we have a side burner) since I have no stove at the moment.

  9. I'm doing a variation of these tonight!! We need 2 cans for our family of 5 so I added an egg, upped the sour cream, and improvised with the rest. I only put 2 green onions but about 1/2 cup cilantro, 1/2 cup feta(no queso cheese here, it goes fast!), a whole jalepeno, a couple shakes of cumin and oregano, garlic and onion powders. It smells heavenly!

  12. Oh! Karen, I can skip the salmon and will be more that happy with that good looking rice and avocado topped with the cheese. For me that is a great meal.

    To answer your question about the market, I do have a set schedule that people can sign up online or in person on cookingsalon.com. I cannot serve to the general public, they have to sign up and pay, or show up and pay to eat any food. This weekend I will be trying 30 minute classes each hour on the hour and see if anyone pops in. The theme on Saturday will be strawberries. Let's hope it works!
