Grilled Garlic and Pineapple Guacamole

Garlic. Is there anybody who doesn't like it? It's good for you and has been used medicinally for thousands of years. Eat it fresh and it has a distinct fiery taste... roast it and it becomes buttery and mellow. I use garlic in a lot of the meals that I cook.

I picked up a few avocados the other day and I must admit, I usually end up eating them plain in a sandwich, but this time I wanted to make some guacamole. I Heart Cooking Clubs theme this week is Sauces and Salsas. Okay, I might have taken a bit of liberty with the theme, but I think guacamole might be considered a salsa of sorts. 

I made so many adaptations of Rick Bayless' Grilled Garlic and Orange Guacamole, that it's pretty much a new recipe. I had two ripe pineapples on the counter from my last Bountiful Basket order, so subbed pineapple for the orange, which gave the guacamole just a touch of sweetness.

I upped the number of garlic cloves in Rick's recipe (6) to twelve and found I could have used more. Yes, I love garlic. Thanks for the inspiration, Rick. And thanks to Girlichef for hosting the National Garlic Day event at her blog!

Grilled Garlic and Pineapple Guacamole - Inspired by Rick Bayless
Cooking spray
12 garlic cloves, peeled
2 jalapenos, seeded
1 small red onion, sliced
1/2 cup fresh pineapple, coarsely chopped
3 avocados, pitted, flesh scooped from skin
2 T lemon juice
1 tsp black pepper
1 tsp salt

Spray a comal with cooking spray. Lay the garlic, jalapenos, and onion and cook, turning as necessary until charred. Remove from comal and put into food processor, along with the pineapple. Pulse until ingredients are coarsely chopped. In a medium bowl, mash avocados with a fork to desired consistency. Add ingredients from the food processor and combine. Add lemon juice, black pepper, and salt. Refrigerate until well chilled. Serve with tortilla chips or use as a garnish for food.

  1. Haha, I used a Bountiful Basket pineapple for my pineapple salsa (which would have fit your theme ;) This sounds really interesting!

  3. There is no such thing as too much garlic and this sounds great! And since the recipe is one of Rick's, there's no doubt how delicious it is. A keeper!

  5. Mmmmm...I LIKE it! I'm in love with any sort of guac -especially some with 12 cloves of garlic in it. And the pineapple? Sounds amazing! Deeeelicious, garlicky goodness ;)

  6. Wow, Love the sound and looks of this quacamole! Pineapple would be a wonderful addition to this dip too. I couldn't handle the garlic, but it sure sounds tasty anyway.

  19. I've never met a Rick Bayless recipe I didn't love! Guac and pineapple is a combination I've never tried and I must do something about that! Pineapples are so delicious right now.
