Pumpkin Roll

 Fall has arrived. I know this because there are leaves on the ground and I watch children walk to school all bundled up in coats and hats. I know it's Fall because the stores are full of pumpkins and gourds and Halloween costumes and cinnamon scented candles. 
Those are all pretty good indicators, but each morning when my Pinterest page opens up, I'm absolutely sure it's Fall because there are recipes upon recipes using pumpkin! Pumpkin bread, pumpkin muffins, pumpkin soup... everybody's in the mood for pumpkin!

So, today I rolled up my sleeves and rolled up a pumpkin cake! This is the Libby's Pumpkin Roll. I've made it in the past and it's very good. The filling is a mixture of cream cheese, powdered sugar, and butter... very creamy and just the thing for this cinnamon and clove scented cake.
The recipe calls for 1/4 cup powdered sugar to be dusted on a tea towel. If you don't use enough sugar, your cake will stick to the towel. Just to make sure, I used a lot of powdered sugar on the towel... probably a cup. The cake didn't stick at all, so I'd recommend using a little more sugar than the recipe calls for to roll up the baked cake.

A slice of this cake and a cup of coffee are the first things on the agenda in the morning!

  1. You saw my version of this! Your photos are so much better, and you didn't make my mistake of not adding enough sugar to the towel. Luckily, the frosting fixed...er, hid... my mistake. I love this classic recipe!

  2. I was about to send out search and rescue! Good to hear from you Karen. I have a friend who makes these roll cakes and they're always so delicious and impressive looking. I've yet to try one. The cream cheese and pumpkin in this is inspiring me.

  4. I've never had success with a baked roll, a California Roll, an egg roll, even tootsie roll but a cake roll....disaster! One day I will get it.... and this looks tempting enough for me to venture out and try it again.

  9. My sister in law each Thanksgiving makes delightful pumpkin rolls. As soon as I saw your post, it made me think of her. These are beautiful.

  10. This is one of my favorite fall desserts. I haven't tried Libby's recipe and it looks delicious. The recipe I use can be a little difficult to roll so I'll give this one a try. I could eat a big slice of this for breakfast.

  17. Hi Karen - Bigfork absentee here. My mother always had these at Thanksgiving and the tradition between all the sibs was to find it and hide it! We all loved her pumpkin roll. Mother passed last month and I was thinking I should start making this roll to continue the tradition. Happy New Year!
