Tonight, quite by accident, I made dinner with items we got at the Farmers Market! Here's the menu:
Meatloaf (a mixture of ground pork from the Market and ground venison)
Buttercup Squash
Red Potatoes
I put about a pound each of ground venison and ground pork in a bowl, added 3 eggs, granulated garlic, dried parsley, plenty of freshly ground black pepper, some red pepper flakes, 1/2 red onion, diced, and one bell pepper, diced.
Then comes the yukky part (or the fun part, depending on how you look at it!) Mush the whole thing up with your hands until everything is all mixed together. I put it in a loaf pan and baked it for about 1 hour 30 minutes at 350.
I boiled the red potatoes then baked the buttercup squash. I cut the squash in half and put it in a 9x13 pan (cut side down, please) with a little water. That baked for a little less than an hour.
Here's our meal - with a little gravy over the potatoes and meatloaf.
Enjoy!
Yum! I don't do much of the cooking around our house--that's hubby's area of expertise. Maybe if I go get all these ingredients he'll make it for me! (Either that or I'll have to invite myself over to YOUR house!)
