Peppermint Marshmallows

Everybody's been making marshmallows! I see recipes for vanilla marshmallows, peppermint marshmallows, toasted coconut marshmallows, and marshmallows dipped in OMG, chocolate!

What the heck... I might as well give them a try. I used this recipe for Vanilla Marshmallows, but substituted peppermint extract for the vanilla.
Homemade marshmallows are nothing but gelatine, sugar, corn syrup, salt, and flavoring. Who knew??
Dissolve three packets of gelatine with 1/2 cup water.
Heat untiil the sugar dissolves, then continue cooking until the mixture reaches 240 degrees on a candy thermometer.
Slowly pour the sugar mixture into the gelatine and beat until very thick (about 15 minutes).
I added 1/4 tsp red food coloring and peppermint extract. The recipe calls for 1 tablespoon, but I thought that might be too strong and only used 1 teaspoon extract.
Dust a pan with powdered sugar and pour the mixture into the pan. Cover the marshmallows with more powdered sugar.

The recipe asks you to wait overnight until cutting them.
Whaaa?

I cut them after three hours and rolled the cut edges in even more powdered sugar.

I'm not really much on super-sweet stuff, but these are good. I put a couple in my hot chocolate this morning and it was a nice touch.
