Baked Oyster Dressing

I was reading someone's blog a while back and she was talking about having saved so many recipes over the years that she hadn't yet made. One of the recipes she cut out of a magazine was for a simple cocktail. The date on the recipe was six years ago! One of her New Years resolutions was to start using these recipes and she said she was going to make that cocktail in 2009!

I have recipes that have been torn from magazines, cookbook recipes that I have bookmarked, a binder full of recipes I've collected and recipes by category in my Word documents.... hundreds and hundreds of recipes that sound good and I'd like to try... someday. But like the woman whose blog I was reading, I seem to make the same things over and over again, failing to try something new and different.

Well, no more! I've wanted to make Oyster Dressing for years. Years! A lot of people might be turned off by oysters so I'm lucky that my gardener likes them. He does carry the anti-cilantro gene, but other than that he'll eat pretty much anything I put in front of him.
Today I made Baked Oyster Dressing and served it with roasted chicken breast.

Yellow onions, green onions, bell peppers, celery, cayenne, garlic, parsley... and of course, oysters. It was heaven on a plate.

Today I'm going to look through my recipes and choose another one that I've been wanting to try!

  1. Hi Karen! Was this good? I've never made it either, but I love oysters. I try not to get overwhelmed by keeping a lot of recipes. I love the research part of it..and the eating...but what I'm trying to say is that I only work with a few at a time. That way I can really savor them.

  2. I have 3 binders full of recipes that i've found on the net plus more recipe magazines tucked away everywhere! You have inspired me to try some, the dressing sounds great!

  3. I am guilty of having tons of recipes saved that I never try! It makes me feel bad, because I do love to try new things! I collect cookbooks and subscribe to 3 recipe magazines...and I seem to stick to the same old stuff!

    I need to branch out....I know! Thanks for reminding me :-)

  4. I have 162 recipes that I need to try and now that I read all these food blogs I have a gazillion more- I better live long, but all this good food may kill me!! I am not into oysters but it is probably because I never had them cooked well, so I will be over next week!
    There has been this cream cheese cake I have been wanting to try for over ten years now. I need to finally do it!

  6. My DH would LOVE this.

    I have a few favorite cook books that are used to death, and the others just sit there, and I never take them down. Hmmmmmm...can you say "RUT" ?

    I have been trying a few things I've found online in the past couple of months.

    My latest thing has been smoothies. I'm making them every morning, and have had some fun, new recipes.

  7. Karen ! I'm so glad I inspired you ! I haven't even made that cocktail yet ! I posted the recipe because others were wondering what was in it ! It will be funny if someone tries it before I do !! They will have to let me know !!

  8. My fond hope for 2009 is that I can begin to organize the gazillion recipes I've clipped over the years. And I do try to dip into the cookbook shelf. At the same time, online recipe research is seductively easy! Love trying new things - your dressing looks good.
