When I was a teen and waiting, wanting and wishing for my own car, I'd spot a car that I liked and would say "I want a car exactly like that... except I want it to be red and I want leather seats instead of cloth and I want a convertible, not a hard-top, and of course I'd get the newest model out... not like that old thing...."
I'd see a dress and say "I'd love to have that exact same dress... only I want it in green... and without the collar."
I wanted to make Stacey's Arroz con Pollo exactly like she did, except I used three cloves of garlic instead of two. I didn't add smoked ham and I used smoked paprika instead of sweet paprika. I left out the green pepper. I didn't garnish it with fresh parsley and roasted red pepper strips and I used way more chicken broth than she did. But other than that, it was exactly the same.
Brown some chicken thighs (both sides) in olive oil. Remove from pan and set aside.Chop an onion and saute with garlic. Add cumin, saffron threads, paprika (smoked or sweet) and saute for a few minutes.
I could have eaten this right out of the pan.Add a can of diced tomatoes and chicken stock along with 1 cup of plain old white rice. Simmer for 30-35 minutes until rice is done and chicken is cooked through. Add some frozen peas.
¡Ay, caramba! this was good! I'm going to make it again and again... just exactly like Stacey did.
aren- This looks delicious. I love arroz con pollo. My fav version is from Fine Cooking Magazine, but this one looks awesome. Ill have to try it next time..

ReplyDeleteThis looks like a great meal and it sound pretty easy! Thanks for sharing!
ReplyDeleteI want to make this exactly like you did, except I want to use chicken breasts instead of thighs, chorizo instead of the ham that you didn't use in your recipe, and chipotle powder instead of smoked paprika! :)
ReplyDeleteExactly! :P Thanks for perpetuating the best part about cooking, which is making it your own. I love your version and am especially taken with adding peas. Great looking plate!

ReplyDeleteLoved you "wish" list....I had one EXACTLY like it, when I was a kid.
Execpt it was a bit different.
Chicken dishes are my favorite.
Any dish that only takes one pot to make is a win win in my book. Plus my dishwasher loves them too.
ReplyDeleteYou can never go wrong with more garlic either.
Nicely done!
Heehee, this looks delicious. Love your story of Inspiration based on "exactness". :-D
ReplyDeleteI can't wait to make this. I saw it on Stacey's site too and bookmarked it. It looks great Karen!
ReplyDeleteWell Miss, it's not EXACTLY like mine!
ReplyDeleteBut still looks good!
The more garlic the merrier, and the ham makes it even yummier!
You made me laugh!
You're too funny! Your 'exact' version looks absolutely delicious and a product of YOU!
ReplyDeleteWhat a colorful dish, love it! I could go for something tasty like that right now.
ReplyDeleteI have to smile when I see you comment on Cary's page (List of the Day). I've been reading him for a long time now, but it feels like my food blogs very rarely intersect with my personal or humorous or gossip ones, so it seems funny to me, if that makes sense!
ReplyDeleteLooks yummy! I need to stop looking at food sites late at night...I'm getting hungry again!
ReplyDeleteoh this dish looks delicous !! can I be invited for dinner? :)
