Roasted Grape Tomato, Spinach and Asiago Pasta

We went to Sam's Club this past weekend and I picked up some of these grape tomatoes.
I just love them... they're so sweet and good for using in salads, with pasta, or just for snacking!
I also got a wedge of Asiago cheese, so when I went looking for recipes for the grape tomatoes, I was glad to have found one that also called for Asiago!
The recipe starts by roasting 3 cups grape tomatoes tossed with 1/4 cup balsamic vinegar, 2 tablespoons of olive oil, salt and pepper.
The tomatoes are roasted at 400F for 30 minutes then added to 4 cups of fresh spinach.  
The recipe calls for 1/4 cup chopped fresh basil, but I used Daregal's fresh frozen basil... about 3 tablespoons.  Daregal is having a recipe contest using their fresh frozen herbs with 1st, 2nd and 3rd prizes of $500, $300 and $100!
The cooked pasta is tossed with the tomatoes, basil, spinach and grated Asiago. The heat from the tomatoes and pasta wilts the spinach slightly.  This was so delicious!  As if the grape tomatoes weren't sweet enough right out of the box, they are just like candy after they've been roasted with the balsamic vinegar.  You could add your choice of meat to this dish, if you'd like.
That huge wedge of Asiago will last us for a while and I don't want any of it to go bad, so I cut it up and use my Seal-a-Meal to package the pieces and then put them into the freezer. See how I misspelled Asiago on not one, but all four packages?!
You're going to think I'm really organized after seeing my freezer inventory sheet!  LOL  Really, I'm not that organized, but the frustration of not knowing what is in the bottom of the freezer aggravates me so much that I started writing down what went into, and out of it.  It makes life much simpler!  We just pencil in the changes and every so often I'll update it on the computer.

  1. Karen this is such a good recipe. I have roasted the bigger tomatoes but never gave the little guys a fair chance. You are killing me with the frozen herbs, must find! Oh and I can't spel to saive my liphe!

  3. I LOVE roasted grape tomatoes! Just made some tonight again. This recipe is a great combination of flavor, I'll have to try it myself.

    Great idea to keep a list of what's in the freezer. I really should do that so I actually use what's in there!

  7. Grape tomatoes are wonderful. We snack on them often. I feel sort of sorry for cherry tomatoes, as they seem to have been shunted off to the sidelines with the advent of the grape tomato, but I guess that's progress :-)

    Funny how you misspelled on all 4 - I would totally do that!!

    And I heard of Daregal herbs through Michele at Life, Lightly Salted. Really want to give those a try.

  21. I buy my tomatoes and lettuce at Costco - much more flavorful and better-priced than at the regular store. I've read about Daregal on quite a few posts recently so I really need to check it out. And I'm awed by your organized freezer! I wish I were so efficient.

  23. Woah - if that isn't organized..I don't know what is. Very smart to package your cheese up like that. I've had to throw away some cheese lately (the stuff you buy for one particular recipe). I might have to steal this idea from you.
