I don't know what I could have done to this dish to make it look more appealing. Maybe it sat under the broiler for a little too long. Maybe I should have put the deliciously roasted cauliflower on top of the tangy, billowy meringue - a mixture of mayonnaise, grated parm, parsley, and lemon juice folded into perfectly beaten egg whites.
Maybe some dishes just aren't meant to look good, they're just supposed to taste good, which this dish does!
We liked this recipe and I will probably make it again, but instead of browning the meringue under the broiler, I think I'll just return the casserole dish to the oven to let it cook and brown.

ReplyDeleteIt was delicious, but I agree it was a bear to photograph and try to make look pretty. Kinda like making pea soup looking appetizing. Some things you just have to accept as tasty without looking at the pictures...LOL
