Imitation Crab Salad

I'm not a big fan of crab. I had fried soft-shell crab in a restaurant once and will never eat it again. Crab legs (for me) are just too much work for the amount of food you get. Ditto with Dungeness Crab. Canned crab? Ehhh. To me, it all is pretty tasteless.

But that Imitation Crab... the fish that's made to look like crab, but not necessarily taste like it? Oh, yeah... that I like!

So, the other day when my gardener needed help loading up all the lumber from the old deck to make a run to the dump, guess who he asked to help?  Yep, yours truly. 

Well, that meant having to take off my sandals to put on real shoes. It meant ruining my hair which I'd just washed and styled because I had to use my straw hat in the sun. Straw hat + sun + sweating = ruined hair.
It meant using gloves to try to save my mani that I got with my granddaughter last week in California.
My daughter went along, too, and she got a pedi. I'm sure she'll be pleased as punch to see this picture on the interwebs.

So, when dinnertime rolled around, and the prospect of lighting the stove or oven became imminent, I decided to go the cold route and came up with this Imitation Crab Salad. We like spicy in our house, so if the horseradish and Old Bay seem like too much, feel free to modify to your taste.

Hauling stuff to the dump. That's a man's job, right?

PRINT RECIPE


IMITATION CRAB SALAD
8 oz. imitation crab, flaked
1/4 cup onion, finely chopped
1/4 cup bell pepper, finely chopped
1 medium tomato, chopped
1/4 cup fresh or frozen peas

1 cup mayonnaise
1/4 tsp granulated garlic
1/4 tsp black pepper
1/4 tsp salt
2 tsp Old Bay Seasoning
1 tsp prepared horseradish
1/2 tsp lemon juice
1/2 tsp dried parsley

Lettuce

Mix first 5 ingredients in a bowl. In separate bowl, mix mayonnaise and next 7 ingredients; add to crab mixture. Chill well. Serve on lettuce with crackers or toasted bread.

  1. I love fake crab too! Regular crab is tasty but much too expensive in the middle of the country. Your salad sounds tasty.

    Your manicure's super cute. Did the gloves protect it?

  2. I love that immitation crab meat too and put it on my garden salad sometimes. I am like you, crab is just too much work for what little you get out of it!!

  3. If you tell me it's imitation, I'm o.k. with it. I get very annoyed when restaurants list a crab dish as "crab" when its really imitation!! We were recently in California and enjoyed dungeness crab--already picked of course!

  4. Cute post! I'm with you on some accounts of the crab situation. I took one bite of soft shell crab and will probably never eat it again.Horrid. Canned crab is just "odd". However, do love crab legs. And I do like using imitation crab in salads. I've got a favorite recipe that I've not made in years. And in this heat? Thanks for the reminder of a good Summer salad.

  6. It sounds great and works for me. That was the only kind of crab I ever ate for years until recently. I've never had dungeness but want to try it sometime. Hope your great looking mani didn't suffer. And your daughter's pedi looks pretty spiffy!

  10. I really like the imitation stuff, too, if - as noted by some - it's done right. I'll sit down and eat a whole package of the stuff straight and no chaser! Very healthy, too, I would imagine.
