Bake this breakfast dish one day and pop some in the microwave during the rest of the week for a healthy, nutritious breakfast. Couldn't be easier, or more delicious on a wintry day.
If your weekday mornings are hurried and you (or the kids) don't have time for much of a breakfast, I think you'll find that this will solve your problem. Easy to put together and quick to re-heat. Pretty tasty, too!
I adapted this recipe and made it a little less fussy. Instead of layering the ingredients, I simply mixed oats, walnuts, cranberries, and apples together along with some spices and liquids, and poured them into a pan, then baked. The recipe is easily adapted to what you have on hand. Use almonds or pecans in place of the walnuts; raisins or prunes in place of the cranberries, and your choice of fruit in place of the apples.
After this is re-heated, you can top it off with more fresh fruit and add cream or milk, if you'd like. Filling and wholesome. I hope you'll give it a try!

ReplyDeleteI have never made baked oatmeal before - but this is really giving me a push, it looks delicious. The hubs and I are the only ones who would eat it (I cannot get my kids to like oatmeal...and I've tried), which is probably why I've never tried. I'll make a small batch one of these days!
