I didn't want baked eggs this morning as much as I wanted heat from every available source in the house.
And that included the broiler.

The eggs are cooked in melted butter and heavy cream sprinkled with a mixture of garlic, thyme, rosemary, parlsey and parmesan. What could be wrong with that?
This recipe makes for a very satisfying evening meal served with a salad and bread.
If you've never tried baked eggs before, I wish you would! The consistency is so different than eggs cooked any other way - they're almost meaty. The mixture of herbs used is so aromatic, it's worth it to make this recipe if only to smell it baking!
But the flavor... oh, the flavor...

I think it was something I read from Lidia Bastianich that talked about the joy of baked eggs. I still have yet to try it.
And we're heat ho's at my place - we've actually been turning the gas oven on from time to time in the evenings because our heater hasn't been working properly. Hmph.

ReplyDeleteYour baked eggs look really delicious -- almost too good for breakfast. I hear you on the heat thing. When I lived in Chicago, my oven was almost always on with the oven door open in the winter.
ReplyDeleteWhat a great week night dinner. After running the kids everywhere, we get home tired and hungry. If I haven't prepped something, or taken frozen leftovers out to thaw, I have a hungry family and do my default--pasta and whatever-is-in-the-fridge.
