100% Whole Wheat Bread

I found this recipe on the King Arthur Flour website. It got rave reviews from bakers all over the country, so decided to give it a try.
The dough goes together quickly and easily. Here are the ingredients: flour, non-fat dried milk, yeast, water, vegetable oil, honey, and salt.
The ingredients go into the mixer all at once and is mixed and kneaded. You can also make this dough by hand or by using a bread machine. The dough is allowed to rise for about an hour.
After the initial rise, the dough is formed into a log and put into a lightly greased loaf pan. Another rise is necessary, which took another hour.
After the second rise, the dough goes into a 350F oven for about 40 minutes, or until an instant-read thermometer reaches 190F.
This bread turned out to be very moist and hearty and I liked the addition of the honey, which gave it a bit of sweetness.

  6. Looks great! I need to get my hands on some whole wheat flour. The flour selection at my local grocery store is... inadequate.

  7. I don't just want the bread...I want the tuna, too. I usually just love deli tuna. Don't know what they do to it, but it never tastes as good at home. I love the KA site. I haven't baked bread in a while; this looks like a good one to try. I'll have to pick up some nonfat dry milk.
